  • 4 cups cooked quinoa
  • 2 cups grilled chicken strips
  • 1½ cups store bought Tikka Masala sauce
  • 2 cups coleslaw mix
  • 2 cups English cucumber rounds, sliced ¼” thick
  • 1 cup cooked corn
  • 1 cup cherry tomato, halved
  • ½ cup cilantro leaves
  • ½ cup store bought tzatziki sauce
  • ½ cup dry roasted chickpeas

Grilled Naan

  • 1 pkg Panaji Original Naan Minis
  • 1 tsp Tandoori Masala powder
  • 2 tbsp vegetable oil
  • Salt to taste

Instructions

  1. Heat Tikka Masala sauce, add the grilled chicken, season with salt to taste and heat
  2. While the chicken is heating, assemble the bowls. In each bowl, place 1 cup of cooked quinoa, top the quinoa with coleslaw, cucumbers, corn and When warm, add the chicken tikka masala to the bowl. Top with a dollop of tzatziki sauce and garnish with the cilantro and chickpeas.
  3. Heat up your grill or cast iron grill pan on medium high heat. Brush each naan with oil, season with Tandoori Masala and salt, then grill for 2-3 minutes per side.
  4. Serve on the side of the bowl.
