Chicken Tikka Power Bowl

Ingredients
Bowl
- 4 cups cooked quinoa
- 2 cups grilled chicken strips
- 1½ cups store bought Tikka Masala sauce
- 2 cups coleslaw mix
- 2 cups English cucumber rounds, sliced ¼” thick
- 1 cup cooked corn
- 1 cup cherry tomato, halved
- ½ cup cilantro leaves
- ½ cup store bought tzatziki sauce
- ½ cup dry roasted chickpeas
Grilled Naan
- 1 pkg Panaji Original Naan Minis
- 1 tsp Tandoori Masala powder
- 2 tbsp vegetable oil
- Salt to taste
Instructions
- Heat Tikka Masala sauce, add the grilled chicken, season with salt to taste and heat
- While the chicken is heating, assemble the bowls. In each bowl, place 1 cup of cooked quinoa, top the quinoa with coleslaw, cucumbers, corn and When warm, add the chicken tikka masala to the bowl. Top with a dollop of tzatziki sauce and garnish with the cilantro and chickpeas.
- Heat up your grill or cast iron grill pan on medium high heat. Brush each naan with oil, season with Tandoori Masala and salt, then grill for 2-3 minutes per side.
- Serve on the side of the bowl.
